Beignets de haricot cornille ??
- Half a kilo of cornille beans (koki) or Black Eyed Beans
- Quarter of an onion
- A wedge of garlic
- A liter of vegetable oil or palm oil of your choice for frying
- An egg
- A mortar or a blender
Dip the bean again the day before preparation.
Wash the beans removing all the skins.
Crush the beans in a mortar or in your food processor until they become a smooth paste.
You can add onion, garlic to it.
Add salt and an egg.
Pour the preparation into a mortar and turn it with a pestle until it doubles in volume. (You can use an electric whisk)
Fry the donuts in hot oil using a tablespoon to form the balls. And now, it’s ready.
You can serve with chilli sauce.
