Simple breast chicken,seasoned with salt then seared on a very hot pan, on both sides,then later finished cooking it in chicken broth,threw in some baby spinach leaves,olives and roasted cherry tomatoes,so as to enhance more flavour to the dish,seasoned it with white pepper and salt,simmered it on low heat for 10 minutes and it was good to go..no need to add any oil as the broth itself contains natural oils extracted from the chicken itself..
The broth was so yummm…
The dish is best served Hot.. Note:To make your own homemade chicken broth or rather chicken stock, simply boil some chicken cacus e.g the necksparts,backpart,feet,chicken bones etc..the juice you get from boiling those,should do as your chicken broth.
